Vie Rose, a place for healthy sofisticated gastronomy

Harmonized dinner

The city of São Paulo holds one of the largest varieties of restaurants in the world, with dozens of countries represented and gastronomic novelties, but there are not many differentiated places with vegan service, including wines.

The Vie Rose proposal is to offer healthy foods elaborated with sophisticated techniques and also organic and biodynamic wines.

The pleasant ambience of the Vie Rose offers cozy indoor lounges with coastal details and a garden with outdoor tables, where the small garden is maintained in conjunction with an organization specializing in urban crops.

Crops in the restaurant

The production of the Hortinha, although small, already supplies the restaurant in its needs of leaves (lettuce, purple lettuce, arugula and cresão) and still leaves for the customers to take home as well. The other agroecological and non-pesticide ingredients come from small rural partner producers.

The menu is executed by the Carioca Chef Alvaro Alencar, who has already passed through Mani, Manioca and Figueira Rubayat. It features a lean menu that always has novelties following contemporary Mediterranean cuisine. The menu items are inspired by the southern region of France, Italy and coastline including techniques devoted to national ingredients.

The natural harmony of the restaurant is complete by offering the wines of the largest organic winery in the world, the Chilean Emiliana Organic Vineyards, which presents in the wine list its icons labels of its 20 years of existence.

Input Matching

A dinner can have the entrances that celebrate a hybrid gastronomy, with national icons like Dadinho Tapioca made with cheese from Serra da Canastra (the best origin of national cheeses) served with pepper jelly, which could also accompany the Pastel de Pumpkin with spices that does not contain in the pasta of so creamy, grilled Coalho cheese with honey truffle and Tartare of Vegano beet. As a harmonization option, the lightweight inputs are served with Adobe Rosé made in Provence style, light and fragrant.

The Chardonnay is offered together with the Tropical salad with cheese, which brings the living leaves of the garden to the dish and make all the difference in freshness and texture. The leaves of the salad came accompanied by seasonal fruits, gorgonzola, walnuts and emulsion of mustard and honey. The minerality and retrotaste of this wine are perfect with cheese and fruit salads.

Creamy Risotto

The main dishes brought consecrated recipes as mushroom risotto finished with truffle oil. Creamy, unctuous and perfect to harmonize with the award-winning Coyam’s brings the maximum expression of the terroir of Colchagua and which has the soul of the biodynamic concept.

For protein lovers, the filet Mignon with Roti sauce, little manioc gratin and bacon crispy is a blessing. The wine that accompanies is the super punctuated Emiliana Gê that presents the essence of each caste in the terroir through this excellent Chilean blend (Syrah, Carmenère and Cabernet Sauvignon).

But the night does not end up salty, so dessert can be the traditional milk pudding or Chocolate Brownie, which does not belong to the territory covered in the menu, but that was up to the height served with caramel ice cream with salt flower and bitter chocolate ganache.

The Vie Rose is in the pleasant neighborhood of Pinheiros and is one of the best options for a harmonized dinner in the city, especially if it is with organic wines!
